Not as simple a question really, since you have to take your kids tastes into account.
A lot depends on what your family likes and what organic foods you have available. You can adapt a lot of grains and veggies into more traditional fare, it just takes some creativity.
With local organic beef we make spaghetti, hamburgers, etc.. If you can get organic sweet potatoes, that is usually a great kid pleaser as well in many forms.
The trick is adapt the organic ingredients into a form YOUR family will enjoy without undermining their nutritional benefits. Here are a few of our favorites:
Any old fashioned buttermilk pancake recipe works great with whole wheat spelt flour, with just a few chocolate chips and a dollop of local honey for sweetness.
Sweet potatoes sliced into fries, gently tossed with oil, sprinkled with cinnamon sugar or garlic salt and roasted into “French Fries.”
Hummus rollups: Spread a tortilla with the chickpea spread, layer it with organic greens, tomatoes, etc… and roll up tightly.
Pizzas, Muffins, Burritos, Casseroles, Soups and Yogurt Smoothies are all great ways to introduce new organic vegetables to even the most picky eaters. Grind up nuts really small in a cheese grater if your kids are young, and don’t forget, there is a reason big food companies put food coloring in everything, kids LOVE color (just make it natural, please!)
Keep trying things and don’t give up!
