My friend is a vegan, does anyone know any really good vegan recipes?
My friend is a vegan and i don’t really have much money so i wanted to make her something for her birthday. preferably something that she’s probably never had before. Does anyone know any interesting, yet extremely good vegan recipes that i would be able to make her. i’m going to see her sunday. preferably a simple one too.

Well i don’t now the recipes but i know a great restaurant. It’s called grass roots and if your not vegan they try to put exceptional thing on the menu.To make it more comfortable>

INGREDIENTS:
1 cup all-purpose flour
3/4 cup white sugar
6 tbsp unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup water
1/2 cup vegetable oil
1 teaspoon vanilla extract
3/4 cup of your choice of toppings (chocolate chips,butterscotch chips,pecans,walnuts…etc)
DIRECTIONS
-Preheat the oven to 350 degrees F and grease a 8X8 baking pan.
-In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in pre-greased baking pan and sprinkle your toppings of Choice on top of the batter.
-Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny and a toothpick inserted in the middle comes out clean. Let cool for at least 10 minutes before cutting into squares.
How about this? It’s pretty easy and it should be things you have around the house already.
Za’tar-Spiced Bean Patties with Coconut-Curry Sauce
1 Large Potatoe peeled and diced
1 medium-sized carrot,chopped
1 cup cooked brown lentils,well drained
1 cup cooked or canned chickpeas,drained and rinsed
1 garlic clove,peeled
2 TBSP dried za’tar (a spice made up of sumac,thyme,oregano,hyssop,can be found in gourmet shops OR just use thyme,oregano,basil,and something lemony,ie lemon zest)
salt
3 TBSP olive oil
1 small yellow onion,chopped
1 heaping TBSP curry powder
1/2 tsp sugar or natural sweetener
1/2 tsp cayenne,or to taste
3/4 cup dices fresh or canned tomatoes
One 14-oz can unsweetened coconut milk,or as needed
1.Steam potato and carrot until tender,about 10 minutes. Set aside to cool.
2.Boil lentils and chickpeas dry and place in food processor or blender (or mash by hand,if you don’t have a machine).Add the potato and carrot mixture,garlic,za’tar and salt to taste. Pulse to combine,beng careful not to overprocess,so that some texture remains.Shape into patties.
3.Preheat the oven to 275 degrees F. Heat 2 TBSP of the olive oil in a large skillet over medium-high heat. Working in batches,add the patties ad cook,turning once,until they’re browned on both sides,about 3 minutes per side. Place the browned patties on a baking sheet and keep warm in the oven.
4. Heat the remaining 1 TBSP olive oil in a medium-size saucepan over medium heat. Add onion,cover and cook until softened,about 5 minutes. Stir in the surry powder,sugar,cayenne,then add tomatoes. Simmer until the tomatoes break up and because saucy,about 5 minutes. Reduce the heat to low and stir in about half the coconut milk.
Optional step-
5.Place the sauce mixture in a blender and process until smooth. Return to the saucepan and and add as much of the remaining coconut milk as needed to achieve the desired consistency. Heat over low heat,then taste and adjust the seasonings. Serve over the patties with lightly sautéd vegetables and maybe some rice,spelt,kamut,millet,quinoa cooked with vegetable broth.
Here’s a great cake to make for her,though I wouldn’t try to put any candles in,might not work.
CHOCOLATE PUDDING CAKE
1 cup flour
1TBSP baking powder
1/4 cup cocoa powder
1/4 tsp salt
1/2 cup dry sweetener
1/2 cup margarine (vegan) or 1/4 cup oil more if the cake batter is dry
1/2 cup soy milk
1 tsp vanilla extract
Sauce:
3/4 cup dry sweetener
1/4 cup cocoa powder
2 cups boiling water
Preheat oven to 350 degrees F. In a Large bowl,stir together the flour,baking powder,cocoa,and salt. Add the Sweetener,margarine (or oil),milk,and vanilla and mix together gently until “just mixed”. Spread in a lightly oiled carrerole dish or loaf. Set aside.
In a medium bowl,mix together the sweetener and cocoa. Sprinkle evenly on top of the cake mixture. Carefully pour the boiling water over top. *Note* DO NOT MIX THIS!!!!!!! It will do it’s own thing in the oven. Bake for 40 minutes. To serve,scoop out portions and serve in a bowl with soy ice cream, if desired.
By the way,your friend is so lucky to have you. Not many people would go out of their way to find a vegan dish for their friend if they themselves are not vegan. Hope this helps!
